Recipe: Chocolate Cheescake

Ingredients
  • 250gr. Digestive  biscuits
  • 100gr Butter
  • 100gr Cream (thickened 35% milk fat)
  • 100 gr Sugar
  • 200gr  Dark chocolate
  • 175 gr Philadelphia cream cheese
  • 1 egg
  • 1 teaspoon vanilla 
  • Whip cream and dark chocolate flakes for decorating (optional)


Directions

Break the biscuits in small pieces into the blender and blend. Mix the blended digestive biscuits with the butter in a bowl and knead to prepare a dough.

Place a sheet of  baking paper on a baking tray of approximately 26cm diameter. We used a heart shaped baking tray.
Press the mix on the bottom and sides of the tray to create the base.

Bake the ceesecake base for 8 minutes on 200 degrees C (390 degrees F).
After it's done, let it simmer and the base is ready.

Beat the egg white with the sugar to create a light meringue.
Meanwhile melt the chocolate and create a whip beating the milk cream. 

In a different bowl, beat the egg yolk adding the cream cheese and the vanilla extract.
Continue beating adding the melted chocolate and  the cream whip.

Finally, add the light meringue in the bowl gradually and mix lightly to create your chocolate cream.
Fill the base with the chocolate cream and spread to become even.

For the topping: 
Grind dark chocolate and decorate with dots of whip cream or any other topping you like.

Last but not least, enjoy with a cup of coffee or tea and share with your loved ones!
